Brownies – Take 2 and Lessons Learned

So, I’ve been trying to find a good brownie recipe to add to my repertoire. I have a chocolate chip cookie recipe and a snickerdoodle recipe I love, but no brownie one yet. I wrote about the last one I tried – it was decent but not addictive. Well – I found an addictive recipe – hubs approved!

It’s simply called “Best Brownies” on AllRecipies.com and includes a frosting recipe. This time, I learned to halve the recipe (most baking recipes make wayyy to much for my hubs and I to eat by ourselves). Side benefit – since it was a smaller recipe, I was able to put it in my toaster oven! Honestly, I felt it was easier to make then the other one, and wow did it come out the way I like it – moist and rich and delicious! I ate so many to “test” right out of the oven.

Some lessons learned – I still had a hard time getting it out of the pan. I greased and floured it, like the recipe called for, but when I tried to get it out, half of it crumbled. I might not have waited long enough for the brownie to cool down. The edges weren’t as hard as last time, but I think I overcooked it last time. I need to Google tips to do this easier.

The frosting was also delicious, though the only thing I didn’t like about it was that I had to spread it – I couldn’t pour it over the top. Hubs says no need to adjust the frosting – he loved it. As for the brownie itself, I read in a review that if I want it even fudgier, then to halve the eggs in the recipe. I might try it…in the mean time, here’s to fixing my brownie craving!
