My hubs loves grilled cheese. I’m somewhat neutral about it, but I did find this garlic grilled cheese recipe that makes me love grilled cheese too. The other part of it for me, though, is enjoying it with a delicious tomato soup or bisque recipe. I brought it up to some coworkers, one of whom recommended a tomato bisque recipe. I decided to give it a try last weekend – and boy was I glad!
The recipe was fairly straightforward even for someone like me, who I would consider an amateur cook. It does take some time though, so I used the simmering time to try the last brownie recipe I had.
As for the grilled cheese, I don’t have the recipe – I just eyeball it. I basically melt (for one sandwich) about two tablespoons of butter in a small dish, then add at least half a tablespoon of garlic powder (I LOVE garlic) and about half a teaspoon of ground cayenne pepper. I mix it all together, then spread it on one side of each slice of bread. I put the buttered side down onto a pan, add cheese in the middle (shredded or sliced), and put the other slice on top with the buttered side facing up. I read a tip to use a smaller pan top to weigh down the sandwich to help squeeze the cheese together and help the sandwich heat. I basically cook on low-medium heat for about 3 minutes on each side, and it comes out perfect!

Luckily, not too many misadventures in trying this recipe. Plus the bisque recipe made so much that it was enough for two more lunches! I didn’t use a sieve like the recipe said, and in the future, I might reduce the amount of the herbs – the flavor was a bit stronger than I’d like, but everything else came together deliciously!
