French Toast Casserole and Brazilian Cheese bread

I’m a stress baker, and it’s a good distraction. So the weekend after I received the horrible news about my baby, I spent it trying two new recipes: French Toast Casserole and Brazilian Cheese Bread. Neither came out perfect, and one definitely came out better than the other, but it was nice for a distraction.

The French toast was pretty straightforward and I loved not having to dip individual pieces of bread and then cooking it. We always use Hawaiian bread (like the dinner rolls, but they come in sliced bread form!) To make French toast so I did make that substitution. Verdict? Delicious! It did come out slightly soggy. The hubs said it reminded him of bread pudding, but he liked it! I made it again the next weekend and added more bread, which helped but it was still slightly soggy. However, I’m learning to eyeball how much bread is needed! I think the Hawaiian bread soaks up the mixture too early… No regrets tough!

Now my poor cheese bread. Granted, my oven is kinda bad..(future expense coming…). And honestly, I’m no experienced baker. But these things did not puff as I expected. Not sure why.. gotta try again. I forgot to take a picture to share though. It was still decent but there’s definitely room for improvement!
